Pickled Onions
Ingredients
- 1 medium red onion, sliced
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 3/4 cup light vinegar (rice, white, white wine)
- 1 small clove of garlic, halved
- 5 black peppercorns
- 1 small dried chili
Directions
Add the sugar, salt, vinegar, peppercorns, and chili to a mason jar, and shake to combine.
Bring 2-3 cups of water to a boil. Place the sliced onions in a sieve over the sink, and slowly pour the boiling water over them. Once drained, add the onions to the jar and shake to combine.
Store in the refrigerator overnight before serving.
